In Austria these lovely pancakes (or crepes) are call Palatschinken. They are enjoyed in a variety of ways; with butter and maple syrup poured over them, or filled and rolled with your choice of sweet fillings (apricot jam, infused with a shot of brandy, or assorted jams, jellies, nutella, cinnamon applesauce or fruit curd) or maybe you prefer savory fillings (spinach and feta cheese, ham and cheese, or Mozzarella or cheese curds and tomatoes). Anyway you serve them they are great. Hope you enjoy! Please Note: The batter keeps in the fridge for up to two days.

1 cup flour

1 pinch of salt

2 tbsp white sugar

240 ml milk

2 large eggs
-
1 tbsp sparkling mineral water

oil for frying
-
(optional fillings) jam, jellies, nutella, curd cheese, cinnamon applesauce

How To Make pancakes austrian style

1Whisk the flour, milk, sugar, and salt together until smooth, then whisk in the eggs. To make the pancakes extra fluffy add the sparkling mineral water when adding the eggs and mix well.

2Heat 2 tablespoons of oil in a pan over medium-high heat. Pour 4 tablespoons of batter into the pan, allow to brown a little then turn and brown on the other side. When ready remove from pan and continue until all your batter is used. Stack the pancakes and keep warm until ready to serve.

3When ready to serve, put a small amount of your preferred filling inside of each pancake and roll like a cigar, sprinkle with icing sugar and enjoy!
