I love pancakes and this is one of my personal favorites. Perfect as is, or served with lemon juice, icing sugar, apple preserves or raspberry/strawberry jam. No matter how you try it, you will love it.

Ingredients For pancakes

  • 2 lg
    eggs, beaten
  • 1/2 c
    white flour
  • 1/2 tsp
    salt
  • 1 Tbsp
    white sugar
  • 1/2 c
    whole milk
  • butter, for frying
  • lemon wedge, to garnish
  • icing sugar, to garnish
  • 2 Tbsp
    butter, melted, to coat sides and bottom of pan

How To Make pancakes

    Preheat oven to 450 degrees F.
  • 2
    Break the eggs into a large bowl and beat well. Add the flour, salt and sugar, mixing well.

    Slowly add the milk, blending until smooth. Let set for 10 - 15 minutes on the counter. Allow your oven to continue to preheat while your batter sits.

    Melt the butter in a pan, making sure to coat the sides and bottom of the pan.

    Quickly pour the batter into the hot prepared pan and bake for 12 - 15 minutes.

    Serve warm with fresh squeezed lemon juice and powdered sugar.
