One of the "Just a Pinch" members asked for a recipe to make your own Pancake Mix (with only dry ingredients). After responding to her, I thought how nice it is to be able to make your own mixes, so I am posting it here also. And I am also including the directions for mixing other ingredients with the mix to make "Perfect Pancakes." I have had this recipe since 1978 and have used it several times over the years. It is just me (and my kitty cat) now, so it takes me a good while to use it up. Enjoy this recipe and pancakes more often since you will already have the mix made; only add liquid

Ingredients For homemade pancake mix**

  • 10 c
    all purpose flour
  • 2-1/2 c
    instant nonfat dry milk
  • 1/2 c
    sugar
  • 1/4 c
    baking powder
  • 2 Tbsp
    salt

How To Make homemade pancake mix**

    Combine all ingredients in a large bowl. Stir together to blend well.

    Put in a large airtight container. Label. Store in a cool, dry place. Use within 6-8 months.

    This makes about 13 cups of PANCAKE MIX. And following is a recipe to make Perfect Pancakes using this mix.

    Perfect Pancakes (Using above mix): For variety, add your favorite fruit to the batter. 1-1/2 cups Pancake mix 1 cup water 1 egg, slightly beaten 3 Tablespoons vegetable oil Put Pancake Mix in a medium bowl. Combine egg, water and oil in a small bowl. Add egg mixture to Pancake Mix. Add more water for thinner pancakes. Blend well. Let stand 5 minutes. Cook on a hot oiled griddle about 3 to 4 minutes, until browned on both sides.
