Ingredients For fluffy blueberry pancakes

1homemade pancake mix recipe (see recipe)

1/2 cblueberries, washed

1/4 tsplemon zest

2 tspclarified butter
How To Make fluffy blueberry pancakes

1In a mixing bowl, add blueberries and lemon zest to the pancake mix batter. Stir to combine and let it rest at room temperature for 15 minutes.

2On medium-high heat, warm up either a skillet, griddle, or crêpe maker. When hot, add butter and spread it out evenly (work in batches if your cooking vessel is not big enough).

3Ladle on about ¼ cup batter trying to gently spread out the blueberries. Cook the pancakes for 2 ½ to 3 minutes per side or until brown. Serve them immediately with butter and maple syrup.
