These Eggnog Pancakes were light and fluffy. And tasted SO GOOD! I enjoy them with a light maple syrup or cinnamon-flavored applesauce.

Ingredients For eggnog pancakes

1 call-purpose flour

1 1/2 tspbaking powder

1/8 tspsalt

1/8 tspground nutmeg

1 lgegg, lightly beaten

1 1/4 ceggnog
How To Make eggnog pancakes

1In a medium-size bowl, whisk together the flour, baking powder, salt, and nutmeg. Then set the bowl aside.

2In a separate bowl, mix together the egg and eggnog. Then add to the dry ingredients mixture. Stir together until well combined.

3Spray the inside of a 10-inch skillet with olive oil and non-stick cooking spray. (I used a granite stone skillet.) Then place the skillet over medium heat.

4Pour 1/4 cup of pancake batter into the stick, and cook until pancakes are golden-brown, then turn the pancakes over when they start to appear bubbling on top.

5Continue cooking the other side of pancakes for about 1 minute and 15 seconds. (Or until pancakes appear to be a light golden brown.)

6Serve pancakes with cinnamon-flavored applesauce or pure maple syrup. (I especially enjoyed mine with the cinnamon-flavored applesauce.)

7With this recipe, I was able to make 7 (4-inch circular) Eggnog Pancakes.
