These Eggnog Pancakes were light and fluffy. And tasted SO GOOD! I enjoy them with a light maple syrup or cinnamon-flavored applesauce.

Ingredients For eggnog pancakes

  • 1 c
    all-purpose flour
  • 1 1/2 tsp
    baking powder
  • 1/8 tsp
    salt
  • 1/8 tsp
    ground nutmeg
  • 1 lg
    egg, lightly beaten
  • 1 1/4 c
    eggnog

How To Make eggnog pancakes

  • 1
In a medium-size bowl, whisk together the flour, baking powder, salt, and nutmeg. Then set the bowl aside.
  • 2
In a separate bowl, mix together the egg and eggnog. Then add to the dry ingredients mixture. Stir together until well combined.
  • 3
Spray the inside of a 10-inch skillet with olive oil and non-stick cooking spray. (I used a granite stone skillet.) Then place the skillet over medium heat.
  • 4
Pour 1/4 cup of pancake batter into the stick, and cook until pancakes are golden-brown, then turn the pancakes over when they start to appear bubbling on top.
  • 5
Continue cooking the other side of pancakes for about 1 minute and 15 seconds. (Or until pancakes appear to be a light golden brown.)
  • 6
Serve pancakes with cinnamon-flavored applesauce or pure maple syrup. (I especially enjoyed mine with the cinnamon-flavored applesauce.)
