Ingredients For welsh rarebit with a kick

2 lgegg yolks

2/3 ccreme fraiche

1 tspenglish mustard powder

1/2 cfreshly grated cheddar cheese

sea salt and freshly ground black pepper, to taste

4 Tbspchilli jam, to taste

4 slice(thick) good-quality bread

worcestershire sauce, to taste
How To Make welsh rarebit with a kick

1Preheat a grill pan (or any pan if you don't have one).

2Whisk the egg yolks with the creme fraiche and mustard powder, then stir in the cheese. Season to taste with salt and pepper and mix well.

3Toast your thick-sliced bread lightly on the grill pan.

4Smear a good tablespoon, or so, of the chilli jam onto the toast, right to the edges. Spoon on 1/4 of the rarebit mixture, spreading it right to the edges.

5Grill the bread until the mixture gets hot and bubbly. Put onto plates. Use a knife to slice a criss-cross pattern onto the topping, then drizzle with some Worcestershire sauce.
