Who doesn't love a leisurely weekend breakfast? Some of the best comfort foods are made during these special moments. I recommend serving these with butter pecan syrup, but this morning, we enjoy them with homemade Molasses Currant Syrup.

2 cself rising flour

1 Tbspdark molasses

1egg

1 tspcinnamon

1/8 tspginger, freshly grated

1 pinchallspice, ground

1 pinchsea salt

1/2 cdark brown sugar

1/2 ccream of wheat, quick cook style

1 Tbspvanilla

1/2zucchini, shredded
-
1small apple, shredded
-
1/4 craisins
-
1/4 csultanas
-
1/4 stickunsalted butter, melted

buttermilk
How To Make weekend spiced apple zucchini raisin pancakes

1Place all dry ingredients is a mixing bowl. Mix with a fork, then sift twice.

2Place wet ingredients, save buttermilk, in a separate bowl. Beat for 1 minute.

3Combine wet with dry. Then add a little buttermilk at a time until you get a nice, wet batter. Whisk well.

4Fold in zucchini, apples, sultanas, and raisins.

5Allow to rest for 5-10 in the refrigerator.

6Butter your griddle, then cook on medium.
