walnut pancakes

Every other Sunday is pancake Sunday at our house. This is the recipe that I came up with after many tries. Topped off with butter and syrup they are sooo good. At least, that's what my husband says...every other Sunday!

Ingredients For walnut pancakes

1 cself rising flour

1 Tbspbaking powder

1 Tbspsugar (i use sugar substitute, splenda etc.)

1egg (can use egg whites)

1/2 Tbspoil
-
1/2 - 1 tspvanilla extract

1 cmilk (i use skim)

1/4 cwalnut pieces or pecans etc.
How To Make walnut pancakes

1Mix self-rising flour, baking soda and sugar together. Beat egg, add oil and vanilla to beaten egg. Add to flour mixture. Then add milk. When thoroughly mixed, stir in nuts.

2Pour by 1/4 or 1/2 cupfuls on hot griddle or skillet. Cook until bubbles appear on top. Turn, cook until golden brown. Makes 6 medium or 4 large pancakes.

3Large nuts can be chopped by putting in a baggie and pounding with the smooth side of a meat hammer/tenderizer.
