This is a nice twist on "regular" pancakes. It goes well with fruit syrup (like raspberry).

Ingredients For vanilla bean pancakes

2 cflour

1/4 csugar

1 Tbspbaking powder

1/2 tspsalt

1vanilla bean
-
2 cmilk
-
2 Tbspvegetable oil

1large egg, lightly beaten
How To Make vanilla bean pancakes

1Combine first four ingredients in a medium bowl; make well in center.

2Split vanilla bean, and scrape seeds into a small bowl; whisk in milk, oil, and egg until blended.

3Add to well in dry ingredients, stirring until just blended.

4Drop batter by 1/4 cupfuls onto a lightly greased hot griddle, cooking until the top is covered with bubbles. Turn pancakes and cook other side.

5Serve.
