Ingredients For seafood crepes

  • CREPES
  • 1 1/4 c
    flour
  • 1/4 tsp
    baking powder
  • 1 1/2 c
    milk
  • 2
    eggs
  • salt and pepper
  • 2 Tbsp
    butter
  • FILLING
  • 1 Tbsp
    butter
  • 6 md
    mushrooms, chopped
  • 2 Tbsp
    scallions, chopped
  • 1 1/2 c
    cooked seafood, shrimp, lobster, crab, and/or scallops, chopped
  • 4 oz
    cream cheese, cut into cubes
  • 2 Tbsp
    half and half
  • 2 c
    shredded Swiss
  • fresh parsley, for garnish

How To Make seafood crepes

    Mix the crepe ingredients together. Brush a skillet or crepe pan with butter then add about 1/4 cup of the batter at a time. Swirl and cook until the top is dry and the bottom is brown. Flip and cook another couple of minutes. Stack on top of each other with wax paper between the crepes.

    To make the filling, add the butter to another pan and cook the mushrooms and scallions until mushrooms have given up their moisture. Add the seafood, cream cheese, and half and half. Cook until smooth and creamy.

    Fill each crepe and fold into a log. Place in a baking dish. Bake at 350 degrees F for about 10 minutes. Add the cheese to the top and bake another 5 minutes until cheese is melted. Serve garnished with parsley.
