Ingredients For sausage & egg gravy over biscuits

1 lbmild pork sausage

6eggs
-
2 - 3 cmilk
-
1/2 cflour
-
2 Tbspcornstarch
-
1/2 ccold water

salt and pepper to taste
How To Make sausage & egg gravy over biscuits

1In a medium pan, crumble up the sausage and add enough water to cover the meat. Bring it to a boil and let the meat cook until done. Drain off the water.

2Place cooked sausage in a large skillet. Turn the temperature to medium. Let the sausage reheat for a few minutes, then add the eggs. Stir to break the yolks. While eggs are still liquid add the flour and stir into eggs.

3When the flour is completely incorporated, then pour in the milk. (enough to fill skillet of the 2-3 cups). Stir constantly until the milk is heated through and hot to the touch.

4In a small bowl, add the cornstarch to the cold water. Stir until the cornstarch is completely dissolved, breaking up any clumps.

5Pour cornstarch mixture into the skillet. Continue stirring until the milk changes consistency and becomes a gravy. Cook to desired consistency. Stir constantly to prevent scorching. Serve immediately.
