Delicious way to start the day, packed full of protein. Perfect before of after a hike or the gym. Substitute the muffin for a croissant for a softer sandwich.

Ingredients For rise n' shine breakfast sandwich

  • 1
    english muffin, toasted
  • 2 lg
    eggs, scrambled
  • 1/2
    avocado
  • 2 slice
    tomato
  • 3 oz
    salmon lox
  • 1 Tbsp
    mayonnaise
  • salt and pepper

How To Make rise n' shine breakfast sandwich

    Once muffin is toasted, spread mayo on one side, and spread/mash the avocado on the other side.

    Lay lox pieces atop the avocado. Top that with the tomato slices.

    Heat a small skillet over medium heat. Spray with olive oil or cooking oil. Crack eggs into pan, and gently agitate the egg to slightly blend the yolk and white together. Add salt and pepper to taste.
While cooking, try to keep the egg in a circular, solid form.

    Once cooked, remove egg in one piece and place on mayo side of muffin, gently close the sandwich, and enjoy!
