This recipe was given to me by a late friend years ago. Her parents lived on a working farm and had many apple trees. They would create or find different versions of baking desserts with apples. She always served this dessert as a breakfast coffee cake. Very moist and yummy good. I added my favorite caramel icing - so good with any homemade apple cake.

Ingredients For raw apple cake

  • 1 3/4 c
    sugar
  • 1 c
    vegetable oil
  • 3
    eggs
  • 1/2 tsp
    salt
  • 2 c
    flour
  • 1 tsp
    soda
  • 1 tsp
    cinnamon
  • 1 tsp
    vanilla
  • 4
    apples peeled & sliced
  • 1/2 c
    nuts
  • FROSTING
  • use your favorite caramel icing.
  • optional: serve with powder sugar, whip cream, or smucker's caramel topping

How To Make raw apple cake

    Beat eggs slightly; beat in oil and vanilla. Mix & sift flour, baking soda, cinnamon and salt. Stir in with all other ingredients by hand, except apples and nuts. Batter will be thick. Beat in apples & nuts with electric mixer - this will thin the batter slightly.

    Pour into a greased and floured 13 by 9 by 2 inch oblong pan or baking glass dish.

    Bake at 350 degrees about 45 minutes or until cake tests done. Use your favorite caramel icing - goes well with this cake. (Optional: Sprinkle with powder sugar before serving.)
