I am always looking for a new healthy breakfast. I created this porridge from an Illinois 4-H recipe.

Ingredients For quick brown rice porridge

  • 1 c
    brown rice, cooked
  • 1 c
    skimmed milk
  • 1-2 tsp
    sweetener: sugar, stevia, agave syrup, honey . . .
  • 1-2 Tbsp
    golden raisins
  • 1-2 Tbsp
    almonds, slivered
  • 1/4 tsp
    pumpkin pie spices
  • pinch cardamom (optional but really good)
  • 1/2 tsp
    vanilla

How To Make quick brown rice porridge

  • 1
    In a small sauce pan, add rice, milk, pumpkin pie spice, cardamom, raisins, and almonds.

    Heat until boiling, turn heat to low, and cook for a couple of minutes until mixture starts to thicken.

    Remove from heat and add vanilla. Serve porridge while warm.

    Note: Double or triple as you wish.
