Really YUMMY with "Warm Cider Syrup!"

Ingredients For pumpkin puff pancakes

1 csifted flour
-
2 Tbspsugar
-
2 tspbaking powder
-
1/2 tspsalt
-
1/2 tspcinnimon
-
1 cmilk
-
1/2 ccanned pumpkin
-
2slightly beaten egg yokes
-
2stiffly beaten egg whites
-
2 Tbspmelted butter
How To Make pumpkin puff pancakes

1(OPT) I also like to add a little ginger or nutmeg to the batter along with about a half cup pecans. Just add according to your liking.

2Sift together dry ingredients. Combine milk, yokes, pumpkin & butter. Add to dry ingredients, stirring just until flour is moistened. Gently fold in egg whites.

3Preheat griddle and use 1/3 cup batter per pancake. Cook evenly on both sides. Makes 8 pancakes. Serve with "Warm Cider Syrup" or your favorite maple.
