Nothing says fall like the aroma of a pumpkin pie or apple pie while it's baking. I combined the two and came up with a wonderful breakfast treat. Hope you enjoy!! Inspired from May Squard blog. Ingredients For pumpkin pie waffles w/warm apple pie topping

  • WAFFLE BATTER
  • 1 c
    all purpose flour
  • 2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 1/2 tsp
    pumpkin pie spices (see ingredients below to make you own pumpkin pie spice)
  • 1 c
    buttermilk
  • 1/2 c
    pumpkin puree (not the pie mix)
  • 1/4 c
    brown sugar, firmly packed
  • 1
    egg, lighty beaten
  • 1 Tbsp
    vegetable oil
  • APPLE PIE TOPPING
  • 1
    20-oz can apple pie filling
  • cinnamon to taste
  • all spice to taste
  • 3 Tbsp
    brown sugar
  • 1 Tbsp
    butter
  • maple syrup to drizzle on top
  • walnuts, broken coarsely to sprinkle on top
  • PUMPKIN PIE SPICE
  • 4 Tbsp
    cinnamon, ground
  • 4 tsp
    nutmeg, ground
  • 4 tsp
    ginger powder
  • 3 tsp
    allspice, ground
  • WHIPPED TOPPING
  • 1 c
    very cold heavy whipping cream
  • 1/4 c
    sugar
  • cinnamon

How To Make pumpkin pie waffles w/warm apple pie topping

    WAFFLE BATTER: Combine flour, baking powder, salt and pumpkin pie spice in a bowl and whisk together to blend.

    In a seperate bowl combine buttermilk, pumpkin puree, brown sugar, egg and vegetable oil; mix to combine.

    Add wet ingredients to the dry ingredients and stir just until moist.

    Spoon onto hot waffle iron and cook 5 to 7 minutes or until steam stops.

    APPLE PIE FILLING: Combine all ingredients in a sauce pan and heat over a low/med heat bubbly and the butter has melted.

    PUMPKIN PIE SPICE: Combine ingredients, mix well and store in an airtight container. If you have Pumpkin pie spice, you do not need this. I was out of Pumpkin Pie Spice so this was my alternative. Thank goodness for a pantry full of spices!

    WHIPPED CREAM TOPPPING: This step is optional and had I not been out of cream I would have added this topping and sprinkled with a little cinnamon. Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar; continue beating until it forms a peak. Refrigerate until ready to serve.

    Plate your waffle, spoon warm apples on top, add additional butter if desired, add a dollup of whipped cream if desired, dust with cinnamon, sprinke with walnuts, and drizzle with maple syrup. Enjoy!!
