Nothing says fall like the aroma of a pumpkin pie or apple pie while it's baking. I combined the two and came up with a wonderful breakfast treat. Hope you enjoy!! Inspired from May Squard blog. Ingredients For pumpkin pie waffles w/warm apple pie topping
- WAFFLE BATTER

1 call purpose flour

2 tspbaking powder
-
1/2 tspsalt

1 1/2 tsppumpkin pie spices (see ingredients below to make you own pumpkin pie spice)

1 cbuttermilk
-
1/2 cpumpkin puree (not the pie mix)

1/4 cbrown sugar, firmly packed
-
1egg, lighty beaten
-
1 Tbspvegetable oil
- APPLE PIE TOPPING
-
120-oz can apple pie filling
-
cinnamon to taste
-
all spice to taste
-
3 Tbspbrown sugar
-
1 Tbspbutter
-
maple syrup to drizzle on top
-
walnuts, broken coarsely to sprinkle on top
- PUMPKIN PIE SPICE

4 Tbspcinnamon, ground

4 tspnutmeg, ground
-
4 tspginger powder
-
3 tspallspice, ground
- WHIPPED TOPPING
-
1 cvery cold heavy whipping cream
-
1/4 csugar
-
cinnamon
How To Make pumpkin pie waffles w/warm apple pie topping

1WAFFLE BATTER: Combine flour, baking powder, salt and pumpkin pie spice in a bowl and whisk together to blend.

2In a seperate bowl combine buttermilk, pumpkin puree, brown sugar, egg and vegetable oil; mix to combine.

3Add wet ingredients to the dry ingredients and stir just until moist.

4Spoon onto hot waffle iron and cook 5 to 7 minutes or until steam stops.

5APPLE PIE FILLING: Combine all ingredients in a sauce pan and heat over a low/med heat bubbly and the butter has melted.

6PUMPKIN PIE SPICE: Combine ingredients, mix well and store in an airtight container. If you have Pumpkin pie spice, you do not need this. I was out of Pumpkin Pie Spice so this was my alternative. Thank goodness for a pantry full of spices!

7WHIPPED CREAM TOPPPING: This step is optional and had I not been out of cream I would have added this topping and sprinkled with a little cinnamon. Pour cold whipping cream into a cold bowl. Beat on high speed of hand mixer until it starts to thicken; add sugar; continue beating until it forms a peak. Refrigerate until ready to serve.

8Plate your waffle, spoon warm apples on top, add additional butter if desired, add a dollup of whipped cream if desired, dust with cinnamon, sprinke with walnuts, and drizzle with maple syrup. Enjoy!!
