My husband and I are both on vacation today. So I whipped this up on a whim as a special treat for us and my older daughter. It was so delicious! I can't wait to make it again.

This French toast is so good it could be a dessert. We were blown away by the wonderful flavors. The warm and creamy peanut butter melts in your mouth. It pairs nicely with the bananas. With hints of vanilla and cinnamon, the bread layer is crispy. Drizzle with a little maple syrup and you have a decadent breakfast or brunch treat.

Ingredients For peanut butter & banana french toast

  • 6 slice
    white bread
  • 2
    bananas
  • 1 1/2-3 Tbsp
    creamy peanut butter
  • 2
    eggs
  • 2 tsp
    vanilla
  • 1/4 c
    almond milk or any milk you want
  • 1 tsp
    ground cinnamon
  • 1 Tbsp
    canola oil

How To Make peanut butter & banana french toast

  • Peanut butter and bananas sandwiched between bread.

    Spread 1/2 to 1 tablespoon of peanut butter on 3 of the slices of bread. Then divide the sliced bananas evenly between the 2 pieces of bread, laying them in one thin layer atop the peanut butter. Top with the other slice of bread. Set aside.
  • Dipping bread into a mixture of eggs, milk, vanilla, and cinnamon.

    Mix the eggs, milk, vanilla, and cinnamon. Dip each sandwich into the egg mixture to coat. Set aside.
  • Frying the sandwiches in a skillet.

    Heat a large pan with the canola oil in it over medium heat. When hot, add the dipped sandwiches to the pan. Brown on one side. Then flip and reduce heat to low. Continue to look until the second side is browned and the inside is slightly melted and gooey. Serve right away with pure maple syrup.
