Super easy and much better then a mix. A family favourite that my children grew up helping me make. My daughter won't eat pancakes made by anyone else. The recipe doubles easily and freezes well for weekday breakfasts on the run.

Ingredients For pancakes

1 1/2 call purpose flour

3 Tbspsugar

1/2 tspsalt

1 Tbspbaking powder
-
1 tspcinnamon (optional)

2eggs, slightly beaten

2 Tbspvegetable oil

1 1/4 cskim milk
How To Make pancakes

1Combine dry ingredients in a medium size bowl.

2Beat eggs slighty. Mix in milk and oil. Add to dry ingreddients. Stir. Allow for as few lumps in batter, they are preferable.

3Heat griddle or skillet over medium/ high burner. skillet in ready when drops of water bounce all over it. Drop batter by the 1/4 cup onto lightly greased but hot skillet. Cook until bubbles appear and edges begin to dry, turn to brown other side. Serve hot with icing sugar and a berry compote or go traditional and smother in butter and real maple syrup.
