Ingredients For one-pan summer eggs

1 Tbspolive oil

2 lgzucchini (chopped)

1small onion

7 ozcherry tomatoes

1clove garlic (crushed)

2eggs

1 tspbasil or other seasoning to taste

2yellow squash (chopped)
How To Make one-pan summer eggs

1Heat oil in a non-stich frying pan, then add the zucchini. Fry for 5 mins, stirring every so often until they start to soften. Add the tomatoes and garlic, then cook for a few mins more.

2Stir in a little seasoning, then make two gaps in the mix and crack in the eggs. Cover the pan with a lid or a sheet of foil, then cook for 2-3 mins until the eggs are done to your liking. Scatter over a few basil leaves and serve wih crusty bread

3Make it for Brunch: Fry some turkey bacon and add a few country-fried potatoes with it ... Yum !
