A former co-worker used to serve this at Saturday get-togethers at her home. I had misplaced the recipe and just found it. It is extremely easy and calls for minimal ingredients. Not sure where the name originated. ENJOY!

Ingredients For norwegian coffee cake - steph

  • 1
    egg
  • 1 c
    milk (put the egg in a measuring cup and add enough milk to equal a cup)
  • 1 c
    sugar
  • 1 1/2 c
    flour
  • 2 tsp
    baking powder

How To Make norwegian coffee cake - steph

    Stir all ingredients together; do not use electric mixer. Pour into an 8 x 8" greased pan. Mix the following ingredients together and sprinkle over the top of the batter: 1/2 stick margarine (melted), 3/4 cup brown sugar, 1 tsp. cinnamon, and nuts (opt).

    Bake at 350 degrees for 20 minutes. This is so easy to prepare if you need something for last minute, unexpected guests as most ingredients are probably already in your pantry and refrigerator.
