Ingredients For my mexican breakfast migas

12 smcorn tortillas-chopped in triangles

2 Tbspcanola oil
-
1/2 mdyellow onion
-
8 lgeggs-scrambled

2 Tbspgarlic parsley salt

1 cham-diced
-
1 ccheddar cheese, shredded
-
1-4 oz canmild green chiles-no drain
How To Make my mexican breakfast migas

1In a nonstick skillet on Med/high heat, add oil. Add in Corn tortillas. Using a wooden spoon, stir and separate each tortilla. Reduce Heat.

2In a large Bowl, crack eggs, Whisk. Set aside. Dice up Ham and Onion. Add to Whisked eggs. Stir to combined. Add in Chilies.

3Turn up heat in skillet again. Add in egg, ham and onion. Scramble until eggs are done, and ham and onion are heated through.

4Sprinkle in Garlic Parsley Salt and cheese. Toss to combined. Serve with salsa or sour cream.
