My take on Mexican Migas. Adding mild green chilies made it even better!

Ingredients For my mexican breakfast migas

  • 12 sm
    corn tortillas-chopped in triangles
  • 2 Tbsp
    canola oil
  • 1/2 md
    yellow onion
  • 8 lg
    eggs-scrambled
  • 2 Tbsp
    garlic parsley salt
  • 1 c
    ham-diced
  • 1 c
    cheddar cheese, shredded
  • 1-4 oz can
    mild green chiles-no drain

How To Make my mexican breakfast migas

    In a nonstick skillet on Med/high heat, add oil. Add in Corn tortillas. Using a wooden spoon, stir and separate each tortilla. Reduce Heat.

    In a large Bowl, crack eggs, Whisk. Set aside. Dice up Ham and Onion. Add to Whisked eggs. Stir to combined. Add in Chilies.

    Turn up heat in skillet again. Add in egg, ham and onion. Scramble until eggs are done, and ham and onion are heated through.

    Sprinkle in Garlic Parsley Salt and cheese. Toss to combined. Serve with salsa or sour cream.
