  • 1 can
    mandarin oranges (15 oz)
  • 1/3 c
    butter
  • 1/2 c
    cane sugar
  • 1 tsp
    vanilla
  • 1
    egg
  • 1 1/2 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 c
    flaked coconut
  • 1/3 c
    brown sugar
  • 1/3 c
    chopped walnuts
  • 3 Tbsp
    butter, melted

How To Make mandarin orange coconut bars for mother's day

  • Reserving mandarin orange syrup.

    Heat oven to 350 degrees. Grease a 7″ x 11″ baking dish. Drain mandarin oranges, reserving the syrup.
  • Butter, sugar, and vanilla creamed together.

    Cream butter, cane sugar, and vanilla.
  • Egg mixed into the butter.

    Add egg and beat well.
  • Sifting flour and baking powder.

    Sift together flour and baking powder. 
  • Flour and syrup added to the batter.

    Slowly add flour to creamed mixture alternately with the reserved syrup.
  • Half the batter spread into the baking dish.

    Spread half of the batter into the prepared baking dish.
  • Oranges arranged over the batter.

    Spoon mandarin oranges evenly over.
  • Remaining batter spread over the oranges.

    Spoon the rest of the batter over, smoothing with a spatula.
  • Coconut, brown sugar, walnuts, and melted butter in a bowl.

  • Coconut mixture sprinkled over the batter.
