Ingredients For jo's tofu scramble

1 Tbspbutter
-
1 Tbspolive oil
-
1 smonion, chopped or 2 green onions chopped

1 smclove garlic, minced
-
1-2 tspfresh sage leaves, fine chop

6 smwhite button mushrooms, sliced thin

1 pkgfresh firm organic tofu
-
1/4 Tbspturmeric, ground
-
1 lgtablespoon light miso
-
fresh ground pepper and sea salt to taste
How To Make jo's tofu scramble

1In a large skillet heat the butter and the olive oil.

2Saute the onion, garlic, sage and mushrooms in the butter/olive oil mixture until tender, do not brown.

3Put the package of tofu into the skillet with the cooked veggies and mash with a fork. Saute for a few minutes.

4Sprinkle in the turmeric and add the miso, salt and pepper.Mix well to get the turmeric spread through the tofu to turn it yellow.

5Serve warm.
