My dad made these pancakes when I was growing up. My husband took over when we were married. He substituted buttermilk for regular milk. All the children (adults too) love to have Dick make these pancakes for breakfast.

1 Tbspdouble acting baking powder

1/2 tspkosher salt

4eggs, separated

1 Tbspcanola oil

2 cbuttermilk
How To Make john friendly amidon's pancakes

1Mix together the dry ingredients and set aside.

2Beat egg whites until stiff.

3Add oil, egg yolks and buttermilk to dry ingredients, stirring just until moistened. There should be some small lumps.

4Gently fold in egg whites, do not over mix.

5Bake on a hot griddle until bubbles burst then flip until golden brown.
