Ingredients For japanese congee with wild mushrooms

1 csweet sushi rice

8 cwater

3 Tbspjapanese soy sauce

2 Tbspmirin

1/2 lbwild mushrooms, i used shiitaki, oyster and maiitaki mushroom sliced

1 cscallions chopped

2 lgeggs beaten
How To Make japanese congee with wild mushrooms

1Put the rice in a colander and rinse under cold water using your fingers as a rake to remove some of the talc. Add the drained rice to a large pot.

2Add the water and heat to boiling. reduce heat to simmer and partially cover with a lid and simmer for 1 hour stirring ocassionally.

3Add the soy sauce, mirin, mushrooms, scallions and cook for 5 minutes. Stir in the beaten eggs and cook 2 more minutes. Serve
