Ingredients For japanese congee with wild mushrooms

  • 1 c
    sweet sushi rice
  • 8 c
    water
  • 3 Tbsp
    japanese soy sauce
  • 2 Tbsp
    mirin
  • 1/2 lb
    wild mushrooms, i used shiitaki, oyster and maiitaki mushroom sliced
  • 1 c
    scallions chopped
  • 2 lg
    eggs beaten

How To Make japanese congee with wild mushrooms

    Put the rice in a colander and rinse under cold water using your fingers as a rake to remove some of the talc. Add the drained rice to a large pot.

    Add the water and heat to boiling. reduce heat to simmer and partially cover with a lid and simmer for 1 hour stirring ocassionally.

    Add the soy sauce, mirin, mushrooms, scallions and cook for 5 minutes. Stir in the beaten eggs and cook 2 more minutes. Serve
