Serendipity brought this gem onto our breakfast table and we knew at once that this had to be shared with everyone! It has all the flavor of your favorite Everything Bagel - - - without the carbs!! Oh dear, I had to have it two days in a row so I could get pictures. NO PROBLEM!

Ingredients For hold the plank - paleo breakfast bagel

2 slicevery large white sweet potato:peeled & sliced (on mandolin) ¼ inch thick

½ tspbutter or ghee
-
2 pinchtrader joe's 'everything but the bagel seasoning'
-
½ smavocado
-
5-6 sprigwatrercress (or other greens)
-
1 slicetomato (optional)
-
1 smegg, any way you like it
-
1 slicecooked bacon
-
1 dashhot sauce of choice (optional)
How To Make hold the plank - paleo breakfast bagel

1Toast the sweet potato planks in a toaster at it's highest setting. Flip from end to end during the toasting process. Repeat 2 or 3 times until planks are tender. There may be some dark spots but that's okay.

2Meanwhile, fry bacon and prepare egg as you like. Peel avocado and slice off about a quarter of it. Slice tomato & prepare the watercress. Season with 'Trader Joe's 21 Seasoning Salute'.

3Spread the plank with a small amount of butter just to make the 'Trader Joe's 'Everything but the Bagel Seasoning' stick to it. Season accordingly.

4Mash the avocado onto the plank. Layer the remaining items and top with second prepared plank. Enjoy
