I have an old recipe for griddle cakes which are moist and fluffy. These are great for any meal along with warm home-made maple syrup, over-easy eggs and bacon, but I also throw them into baggies and take them hiking.

Ingredients For griddle cakes

2 crolled oats

1 1/2 call purpose flour

1 tspsea slat

1 tspbaking soda
-
2 Tbsphot water
-
1 tspbaking powder
-
2 1/2 calmond milk
-
2 Tbspheavy whipping cream
-
2eggs, beaten
-
2bananas
-
2 tsphoney
How To Make griddle cakes

1Combine oats and flour in a large bowl; add almond milk, stir and refrigerate overnight.

2In the morning, mash the bananas and dissolve the baking soda in the hot water.

3Add salt, baking soda mixture, baking powder, bananas and honey to the flour mixture and stir in.

4On a medium high oiled skillet, drop griddle cake mixture by spoonfuls onto griddle. Cook until edges look dry and flip.

5Serve with warm maple syrup
