Granola can be expensive and fatting. Now you can make your own and control cost and calories! This is great in yogurt!

Ingredients For granola

  • 1 1/2 c
    rolled oats
  • 1/2 c
    oat flour (you can put oats in a processor or blender to make this)
  • 1/4 c
    cashews, unsalted (if you use salted dont add additional salt)
  • 1/2 c
    almonds (i like the sliced ones)
  • pinch
    cinnamon
  • pinch
    sea salt
  • 1/2 c
    lite coconut milk
  • 1 Tbsp
    brown sugar
  • 1 Tbsp
    vanilla extract
  • 3/4 Tbsp
    cashew butter (you can sub peanut or almond butter)
  • 1 Tbsp
    maple syrup
  • 1/4 c
    dried cranberries
  • 3/4 c
    dried cherries
  • 2 Tbsp
    honey

How To Make granola

    Preheat oven to 275°. Lightly coat a baking sheet with canola oil.

    Combine oats, oat flour, nuts, cinnamon and salt in a medium bowl and mix well. Combine coconut milk, brown sugar, vanilla extract, cashew butter and maple syrup in a small bowl and mix well. Add to dry mixture and mix until ingredients are moist.

    Crumble mixture onto baking sheet and bake for 45 minutes to 1 hour, stirring after 25 minutes to allow for even cooking. Remove granola from oven, break apart while still slightly warm and toss with dried fruit and honey. Cool on baking sheet.
