My husband's grandmother loved to cook for large family and I was fortunate to receive copies of the best loved recipes. This was one of the breakfast staples in her house.

Ingredients For grandma's banana pancakes

1 1/2 csifted flour

3 1/2 tspbaking powder

3/4 tspsalt

1 Tbspsugar

1egg well beaten, room temperature

1 1/2 cmilk, room temperature

3 Tbspmelted shortening or unsalted butter

1 cfinely diced bananas

1/2 tspvanilla
How To Make grandma's banana pancakes

1If using electric griddle heat to 380 degrees and preheat. If using pan turn to medium heal and preheat the pan.

2Mix and sift the flour, baking powder, salt and sugar.

3Combine the egg, milk, vanilla and shortening/butter in separate bowl.

4Add wet mixture to dry ingredients then mix until just fully combined.

5Gently fold in banana.

6Pour small amounts of batter on greased cooking surface and cook until lightly golden. Serve and enjoy
