good morning bean burritos
We needed a quick and easy early morning Mexican food breakfast and I had a craving for bean burritos. I had an abundant supply of rotel tomatoes on hand and some left over salsa from last nights snack and quickly put this together. So yummy and satisfying!

Ingredients For good morning bean burritos
- SAUCE:

1 canrotel tomatoes
-
1/2 csalsa (like picante)
- THE INSIDE:

1 canrefried beans
-
1/3 conions, diced
-
2-3 cshredded cheddar cheese
-
4flour tortillas
- GARNISH:
-
cilantro, fresh

sour cream
How To Make good morning bean burritos

1In a saucepan combine rotel tomatoes, salsa and onions. Bring to a boil and simmer about 10 miinutes

2In another saucepan or bowl in a microwave, heat refried beans.

3In an 8 x 9 baking dish, spoon some of the salsa mix on the bottom.

4Form burritos by spooning beans and cheese, then roll up burrito style. Place on top of the salsa.

5Top burritos with remaining salsa and sprinkle with cheese. Bake at 350 F for about 20-25 minutes until hot and bubbly.

6Garnish with cilantro and serve with sour cream on the side.
