This is my first attempt at using coconut flour in pancakes. Delicious!

Ingredients For gluten free coconut flour pancakes

1/4 call purpose gluten free flour (i use king arthur)

1/4 ccoconut flour

1 tspbaking powder
-
2 tspflax seeds
-
2 Tbspwater
-
1/2 Tbsphoney
-
1/2 tspvanilla extract
-
1 tspcinnamon
-
2 cliquid (i used unsweetened vanilla hemp milk)
How To Make gluten free coconut flour pancakes

1Grind flax seeds into a meal. Soak in 2 Tbsp. water for 5 minutes.

2Mix remaining ingredients. Stir in the flax seed meal in its water.

3Cook as you would any pancake recipe. These will take a bit longer to cook through than a regular pancake batter.

4Serve with fruit topping, honey, or maple syrup.
