How about a special breakfast for that special someone in your life? Serve with butter and maple syrup and a large dollop of whipped cream, or serve with vanilla ice cream as a dessert. Super easy to make, and this would make a lovely dish to serve to company. Enjoy!

  • 1 large granny smith apple peeled and sliced thin
  • 2 tablespoons butter for skillet
  • MEDIUM BOWL:
  • 1/3 cup flour
  • 2/3 cup milk
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • SMALL BOWL:
  • 4 tablespoons sugar
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

  • I used a Granny Smith apple in this dish.

    Peel and core a large Granny Smith apple and slice it thin.
  • Melted butter in a cast iron skillet

    Melt butter in a 10-inch, well seasoned, cast iron frying pan.

    In the small bowl, combine 3 tablespoons sugar with cinnamon and nutmeg.

    In the medium bowl, whisk together eggs, milk, salt, flour, vanilla and the reserved 1 tablespoon of the cinnamon mixture.

    Sprinkle the small bowl mixture evenly over the melted butter, add the apple slices and gently stir to coat the apples.

    Cook over medium heat 4 to 5 minutes. Cool slightly.
