  • ¼ tsp
    fine sea salt
  • 1 pinch
    ground black pepper
  • 150 g
    plain flour
  • 400 g
    milk
  • 12
    uncooked cocktail sausages
  • 6 slice
    streaky bacon
  • 12
    cherry tomatoes, halved

    Preheat the oven to 230 degrees C. Add ½ tsp sunflower oil to each hole of a 12 hole muffin tin and place in the oven to preheat.

    Add the eggs, salt, pepper, flour, and milk in a mixing bowl.

    Mix 15 sec/speed 6.

    Set mixing bowl aside to rest. Meanwhile, fry the sausages and bacon in a frying pan on the hob until browned. Once cooked, cut bacon slices in half.

    Carefully pour into the hot tin, distributing evenly between the 12 holes. Top each with a piece of bacon, a sausage and 2 cherry tomato halves. Immediately return to oven and bake for 20 minutes (230°C) until well risen. Serve immediately.
