Ingredients For fruit and fiber breakfast cookies

2/3 call purpose flour**

3/4 cplus 1 1/2 tbls. whole wheat flour**

1/2 coat bran
-
1/2 Tbspchia seeds
-
2 Tbspflax seeds, ground

1 1/4 tspcinnamon
-
1/2 tspbaking soda
-
1 cbrown sugar
-
3 Tbspcoconut oil, melted (can use butter)

1 tspvanilla
-
6 Tbspegg substitute (or 2 whole eggs)

1/2 cground walnuts
-
1/3 craisins (soaked to soften)

1/3 cchopped dates
-
2 Tbspdried cranberries*

* can use 3/4 cup any dried fruits for those in this recipe

** can use any combination of flours, e.g., spelt, oat, ap, etc.
How To Make fruit and fiber breakfast cookies

1Preheat oven to 350°. Stir together the first 7 ingredients and set aside.

2In a mixing bowl, combine, the sugar, coconut oil, vanilla, and egg substitute. Mix until combined. Stir in the dried fruits.

3Stir in the flour mixture until moist and completely combined (will be sticky). Stir in ground walnuts.

4Drop by teaspoon on sprayed cookie sheets and slightly flatten.

5Bake 10 - 12 minutes or until bottoms just start to brown.

6Store in airtight container.
