Ingredients For french toast muffins
- MUFFINS

1 1/2 call-purpose flour

1/2 csugar
-
1 1/2 tspbaking powder

1/4 tspnutmeg
-
1/3 capplesauce or canola oil

1 lgegg
-
1/2 csoy milk
- TOPPING
-
1 Tbspsugar
-
1 Tbspground cinnamon
-
2 Tbspbutter, melted or maple syrup
How To Make french toast muffins

1Preheat the oven to 350 degrees F. Spray a muffin pan with baking spray or fill with paper liners.

2In a large bowl, sift together all dry ingredients.

3Add wet ingredients and stir just until combined, but still a bit lumpy. Do NOT overmix; overmixing will ruin the texture of the finished muffins.

4Spoon or scoop batter into prepared muffin tin. Fill each cup about 3/4 of the way.

5Bake for 20-25 minutes or until they just start to turn a bit golden at the edges and a toothpick inserted in the center comes out clean.

6For the topping, mix the sugar and cinnamon in a small bowl. Place canola oil in another small bowl.

7Dip the warm muffins in the melted butter or maple syrup or use a spoon to drizzle it over the muffins. Then dip, roll, or sprinkle the muffin in the cinnamon sugar. NOTE: May have leftover topping. The extra topping can be used for dipping while eating the muffins.
