Ingredients For french toast muffins

  • MUFFINS
  • 1 1/2 c
    all-purpose flour
  • 1/2 c
    sugar
  • 1 1/2 tsp
    baking powder
  • 1/4 tsp
    nutmeg
  • 1/3 c
    applesauce or canola oil
  • 1 lg
    egg
  • 1/2 c
    soy milk
  • TOPPING
  • 1 Tbsp
    sugar
  • 1 Tbsp
    ground cinnamon
  • 2 Tbsp
    butter, melted or maple syrup

How To Make french toast muffins

    Preheat the oven to 350 degrees F. Spray a muffin pan with baking spray or fill with paper liners.

    In a large bowl, sift together all dry ingredients.

    Add wet ingredients and stir just until combined, but still a bit lumpy. Do NOT overmix; overmixing will ruin the texture of the finished muffins.

    Spoon or scoop batter into prepared muffin tin. Fill each cup about 3/4 of the way.

    Bake for 20-25 minutes or until they just start to turn a bit golden at the edges and a toothpick inserted in the center comes out clean.

    For the topping, mix the sugar and cinnamon in a small bowl. Place canola oil in another small bowl.

    Dip the warm muffins in the melted butter or maple syrup or use a spoon to drizzle it over the muffins. Then dip, roll, or sprinkle the muffin in the cinnamon sugar. NOTE: May have leftover topping. The extra topping can be used for dipping while eating the muffins.
