flourless blender oatmeal pancakes

I got this recipe from www.chickensintheroad.com a couple of weeks ago...changed it up a bit to fit into my healthy eating plan. High protein, low sugar, and my 2 year old daughter loves them! I usually make extra and freeze them to heat up in the toaster on busy days!

Ingredients For flourless blender oatmeal pancakes

  • 1 3/4 c
    water
  • 2 scoop
    vanilla protein powder
  • 3 lg
    eggs
  • 2 Tbsp
    canola oil
  • 2 tsp
    vanilla
  • 2 c
    oatmeal, uncooked - not quick cooking
  • 2 Tbsp
    brown sugar
  • 1/2 tsp
    salt
  • 1/2 tsp
    baking soda
  • 2 tsp
    baking powder
  • 1 Tbsp
    cinnamon

How To Make flourless blender oatmeal pancakes

    Place oatmeal in the blender and blend on high/pulse until oats have a flour consistency. Add remaining ingredients and blend well.

    Cook on hot griddle with melted butter or sprayed with your favorite cooking spray. You can also cook in hot waffle iron...make sure to spray the iron. Note: You can substitute the protein powder and water for 1 3/4 cup of buttermilk. If you do not have buttermilk you can mix regular milk with 1 Tablespoon of vinegar. The mix will seem thin, but will thicked after it sits for a little bit. No flour is needed! Enjoy!
