This is my lightened version of a recipe I found on a box of mushrooms. I entered it in my Weight Watcher file and found it will only be 4 Smart Points. very quick, and also great for my Vegetarian friends.

Ingredients For egg and mushrooms on toasted muffins

3quick sprays of coconut oil
-
8 ozsliced white or brown mushrooms
-
3green onions, sliced
-
2/3 cegg substitute like egg beaters
-
1/2 tspmrs. dash garlic seasoning
-
1 Tbspparmesan cheese
-
1/3 cdiced roasted red peppers
-
2thomas english high protein muffins
How To Make egg and mushrooms on toasted muffins

1Using a nonstick skillet sprayed with coconut oil, saute mushrooms & green onions until mushrooms are lightly browned.

2Mix Mrs. Dash into egg substitute; Add to skillet; Cover and cook until top is almost set.

3Sprinkle with Parmesan cheese.

4Cut eggs into 4 servings. Add to toasted English muffin. Top egg mixture with the diced roasted red pepper; Cover with muffin top & enjoy!
