One of my best friends, Kathy, gave me this recipe she got from her friend Penny, It is a very close rendition of a famous crumb cake from the B&W Bakery in Hackensack, NJ. Although their version is most likely a yeasted cake batter, this recipe is very easy and just as good (to me).

3 call purpose flour

1 csugar

1/4 tspsalt

1 1/2 tspbaking powder

2 1/2 tspcinnamon

3/4 cbrown sugar, firmly packed

3 stickunsalted butter, room temperature
- CAKE

1/2 stickunsalted butter

1 csugar

1egg
-
1 Tbspvanilla

2 call purpose flour

2 tspbaking powder

1/4 tspsalt

12 ozevaporated milk
-
1/2 cpowdered sugar, sifted. optional .. use this to dust the top of crumbs after cooking.
How To Make crumb cake from kathy via penny

1CRUMB: Except brown sugar and butter. sift everything together in a large bowl. Then using a pastry blender or fingers add the brown sugar and butter and lightly squeeze into a crumb like texture.

2Preheat oven to 350 degrees.

3CAKE: Mix flour, baking powder, and salt. Set aside.

4Cream the butter in a mixer, then add sugar, egg, and vanilla, creaming all together. Alternate adding flour mixture and milk to the creamed mixture.

5Pour cake batter into a greased 12 by 9 pan. Sprinkle crumb mixture over the top. Bake for about 45 minutes.

6Cool cake and before serving dust the top with a heavy coat of powdered sugar.
