When we moved to Mississippi these pancakes were on every restaurant menu. We liked them so much I came up with this recipe. Hope you try and enjoy.

Ingredients For cornmeal pancakes

1 1/2 cyellow cornmeal

1/2 call purpose flour

1 Tbspsugar

2 Tbspcooking oil

1 lgegg

1 tspsalt

1 tspbaking soda

2 cbuttermilk
How To Make cornmeal pancakes

1In a medium bowl sift together dry ingredients, add buttermilk, oil and egg. Blend well. Let stand 10 minutes. Fry in lightly oiled hot skillet, using 1/4 to 1/3 cup batter per pancake, depending on the size you prefer. Fry until golden brown, turning once to brown other side. Serve with butter and syrup or honey.
