Ingredients For chocolate "muscle" muffins

  • 1 1/4 c
    old fashioned oats
  • 1 c
    whole wheat flour
  • 2 Tbsp
    unsweetened cocoa powder
  • 2 Tbsp
    100% whey protein (chocolate, vanilla, or any other)
  • 1 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1
    large egg
  • 1 c
    unsweetened applesauce
  • 1/2 c
    low fat milk + 1/2 tsp white vinegar
  • 3 Tbsp
    honey
  • 2 Tbsp
    olive oil
  • 1/2 c
    raisins

How To Make chocolate "muscle" muffins

    Preheat oven to 350 degrees.

    Mix all dry ingredients together.

    In a separate bowl whisk all wet ingredients together.

    Make a well in the dry ingredients and pour the wet ingredient mixture into the well. Mix together until just moistened. Stir in raisins.

    Bake 20 minutes or until toothpick comes out clean.
