For when the fresh cherries are just getting soft.

Ingredients For cherry scones

  • 3/4 c
    cherries, chopped
  • 1/2 tsp
    sugar
  • 1 c
    flour
  • 1 tsp
    baking powder
  • 1/8 tsp
    baking soda
  • 2 Tbsp
    sugar
  • 1/4 c
    butter, cold and cut into small pieces
  • 1/4 c
    milk
  • 1 lg
    egg yolk

How To Make cherry scones

  • 1
    Place chopped cherries in a bowl and sprinkle 1/2 teaspoon of sugar over them, then stir gently. Set aside.

    Preheat oven to 400 degrees. Line baking sheet with parchment paper.

    Mix together flour, baking powder, baking soda and sugar.
  • 4
    Cut in the butter until mixture resembles coarse crumbs.
  • 5
    Whisk together milk and egg yolk. Pour into flour mixture and stir until combined.

    Stir in chopped cherries.

    Turn dough onto lightly floured surface. Knead lightly and shape into 5" circle.(about 1" thickness)

    Cut into 4 scones and place on baking sheet.

    Bake 12-15 minutes, until golden.

    Let cool on baking sheet one minute before transferring to wire rack.
