These are creamy and satisfying for breakfast, brunch, or side dish. I came up with it on the spur of the moment and they were delish.

Ingredients For cheesy chile grits

  • 4 c
    water
  • 3/4 tsp
    salt
  • 2 Tbsp
    butter
  • 1
    fresh jalapeno fine diced (seeds & removed)
  • 1 Tbsp
    lousiana style hot sauce (not tabasco sauce)
  • 1 c
    (heaping) quick cooking grits
  • 3/4 c
    milk
  • 3/4 c
    shredded swiss cheese( any kind would do fine-this is what i had on hand)
  • 1 c
    shredded sharp cheddar

How To Make cheesy chile grits

    In Medium sauce pan, add first 5 ingredients and bring to rolling boil. Add grits and stir 1 minute then reduse heat to simmer and cook 15 minutes covered. Keep close eye on them and stir frequently.

    Add milk and combine well. Cook uncovered for 5 minutes. Should have a very creamy texture. Turn off heat and add cheeses and mix well.

    Serve as a side dish, or for a complete breakfast serve in bowls with an over-easy egg on top and let yolk run all over it. (This is my personal favorite). ENJOY
