Oh I remember having this the very first time, while eating outside on a covered porch, overlooking the ocean in Puerto Rico. There was a buffet style breakfast, and someone making omlets, and another station was preparing French toast. Breakfast eaten outdoors is so luxurious and this was delicious.

Ingredients For caribbean french toast

4 slicethick bread, like sourdough, french bread, or multigrain bread

2eggs beaten lightly
-
1/4 cmilk or cream
-
1/4 tspcinnamon
-
2 tspsugar
-
1banana
-
1 ccorn flakes, crushed
-
1/4 creal maple syrup
-
1 Tbspraspberry jam, or orange marmalade

2 Tbspoil for frying.
How To Make caribbean french toast

1Mix the eggs, milk, sugar and cinnamon. Dip the bread into this mixture first, and then into the corn flakes.

2Heat a large skillet and add butter or oil, enough to coat the pan. Pan fry the French toast until lightly browned and not soggy.

3Place the first slice on a large plate, spread the jam, then lay the sliced banana on top of it, layer the second slice of bread, and pour on the maple syrup.
