Oh I remember having this the very first time, while eating outside on a covered porch, overlooking the ocean in Puerto Rico. There was a buffet style breakfast, and someone making omlets, and another station was preparing French toast. Breakfast eaten outdoors is so luxurious and this was delicious.

Ingredients For caribbean french toast

  • 4 slice
    thick bread, like sourdough, french bread, or multigrain bread
  • 2
    eggs beaten lightly
  • 1/4 c
    milk or cream
  • 1/4 tsp
    cinnamon
  • 2 tsp
    sugar
  • 1
    banana
  • 1 c
    corn flakes, crushed
  • 1/4 c
    real maple syrup
  • 1 Tbsp
    raspberry jam, or orange marmalade
  • 2 Tbsp
    oil for frying.

How To Make caribbean french toast

    Mix the eggs, milk, sugar and cinnamon. Dip the bread into this mixture first, and then into the corn flakes.

    Heat a large skillet and add butter or oil, enough to coat the pan. Pan fry the French toast until lightly browned and not soggy.

    Place the first slice on a large plate, spread the jam, then lay the sliced banana on top of it, layer the second slice of bread, and pour on the maple syrup.
