This recipe is from Sister/Aunt Viola 7/14/1976 who got it from "Mrs. Fire News" submitted by Mrs. Kenneth Batterberry 4/1967. This is the only pancake recipe I use since 1976. They are so light and fluffy!

Ingredients For buttermilk pancakes- mrs. batterberry

1 qtbuttermilk

2 tspsalt

6 Tbspsugar

6eggs, slightly beaten w/fork

3 tsprounded, baking powder

2 tsprounded, baking soda

4 cflour, or a bit more

4 Tbspbutter, melted

1 tspvanilla
How To Make buttermilk pancakes- mrs. batterberry

1First whisk dry ingredients together. Make a "well"; add remaining ingredients.

2Beat really hard ( or use electric mixer). Batter may be made night before. Will keep "a couple of days" in refrigerator.

3Use 1/4 cup or 1/3 cup batter per pancake. Don't need to grease griddle, but you may prefer to lightly grease it.
