Ingredients For breakfast (sweet) potatoes

1 lbsweet potatoes,peeled and cut into 1/2" cubes

1/2 cgreen bell pepper
-
3/4 cchopped sweet onion

1 1/2 tspfreshly minced garlic

1 1/2 tspextra-virgin olive oil

1/4 tsppaprika
-
1/8 tspsalt,plus more to taste

ground black pepper to taste
-
ground red pepper to taste
How To Make breakfast (sweet) potatoes

1Preheat the oven to 400. Line a large baking sheet with parchment paper.

2In a medium glass or plastic mixing bowl,combine the 1st 7 ingredients and toss well to combine. Transfer to the prepared baking sheet and arrange in a single layer.

3Bake for 20 minutes. Turn the potatoes pieces with a spatula and bake 20-25 minutes longer,or until the potatoes are tender and the onion and pepper are lightly browned. Season with the additional salt and pepper and red pepper. Serve immediately.
