My dad was not the cook in the family but he would take on making weekday breakfast for the kids fairly regularly. We could always count on oatmeal, soft boiled eggs (shells may or may not be included) his special fancy eggnog creations, or breakfast rice. Dad usually just whipped up some Minute rice but I use leftovers from the night before's dinner. Delicious breakfast + using up leftovers, win!

Ingredients For breakfast rice

  • 2 c
    cooked rice, (brown, white, instant)
  • 2 Tbsp
    butter
  • 1/2 c
    milk, plus milk or cream for serving
  • 1/2 c
    raisins
  • 1/2 c
    brown sugar
  • 1 tsp
    cinnamon

How To Make breakfast rice

  • 1
    Stir raisins into rice. In saucepan on range or in microwave heat rice and raisins with butter and milk until nearly boiling. Stir in brown sugar and cinnamon. Serve with milk or cream.
