On top of pan-fried sliced potatoes are savory sausage, creamy scrambled eggs, gooey shredded cheddar cheese, and flavorful chopped chives. You eat it more like a casserole than nachos, but it's a fun weekend breakfast or brunch idea. Don't like sausage, diced ham could easily be substituted.

  • 8 large eggs
  • 2 tablespoons water
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 4 ounces cheddar cheese, shredded
  • 1/8 cup chopped chives
