I like to shout " Good Morning Viet Naan " when serving this....I am inspired by the Bahn Mi sandwiches with the delicious pickled veggies on top. This is great any time of the day :0)

Ingredients For breakfast naan bahn mi

  • 1 lg
    naan flatbread
  • 2 tsp
    red pepper relish or sauce
  • 1/2 c
    thinly-sliced browned smoked sausage
  • 2 lg
    fried eggs over medium ( or any style)
  • 1/2 c
    thinly-sliced cucumber
  • 1/2 c
    thinly-sliced red oion
  • 1/4 c
    pickled julienned carrots, red pepper, etc from pickled veggie mix
  • 1 sm
    thinly sliced radish (optional)
  • 1 Tbsp
    cucumber peel shavings

How To Make breakfast naan bahn mi

  • 1
    Heat naan slighly according to pkg directions to warm and soften.
  • 2
    Spread flat side of naan with red pepper sauce or relish.
  • 3
    Place the sausage slices on one side of the naan.
  • 4
    Top with the two cooked eggs side-by-side.
  • 5
    Top with the cucumber, red onions and then the pickled veggies.
  • 6
    Garnish with a little of the cucmber shavings or a little cilantro if desired.
