- BATTER

1/4 call-purpose flour

1/4 cwhole wheat flour

1/4 coat flour

1/4 cnut flour - almond or walnut

1/4 tspbaking soda

1/4 tspbaking powder

2 Tbspground flaxseed
-
1 tspcinnamon
-
3 Tbspolive, canola or coconut oil

3 Tbspunsweetened applesauce*

1 1/2 Tbspegg substitute
-
2 Tbspsugar
-
2 Tbspbrown sugar

1 tspvanilla
-
*can also use mashed banana or a fruit flavored baby food
- MIX-IN'S

1/4 cquick oats, oat bran or wheat bran

1/4 cchopped walnuts or other nuts
-
1/4 craisins, dried cranberries or other dried fruit
How To Make breakfast cookies

1Mix the dry ingredients in a bowl.

2Stir together the oil, applesauce, sugars, egg substitute and vanilla. (Can use a mixer or stir by hand.) Mix in the dry ingredients.

3Stir in whatever you want to use as mix-in's. If using raisins, soak in boiling water for a few minutes and drain.

4Drop by teaspoons onto a sprayed baking sheet. Bake at 350° for 10 - 12 minutes.
