I found this in a VERY old cook book and gave it a try, Not a real fluffy pancake but very good and very easy to make. This only made 6 medium sized cakes, so you may want to double it.

Ingredients For breadcrumb griddlecakes

1 csoft bread crumbs

1 cbuttermilk, or sour milk

1/2 tspbaking soda

2 lgeggs
-
1-2 Tbspgranulated sugar

1/2 call purpose flour

2 tspvanilla extract (optional)
How To Make breadcrumb griddlecakes

1Soak the breadcrumbs in the buttermilk for several hours, ( I soaked them overnight in the refrigerator)

2Then stir in the rest of the ingredients using enough flour to make a thick batter.

3cook as you would regular pancakes. enjoy!!

4I used exactly 1/2 cup of flour, and I also used 2 T of sugar and the vanilla was my idea because I love vanilla
